We use “Ipponjime” sake rice cultivated under contract with local farmers.Slowly fermented in Aso spring water in the cold, it has just the right amount of umami and sweetness, and the softness of the mouth is popular among sake beginners.

Yamada Nishiki from Kumamoto Prefecture is used as the raw material rice, and it is brewed with Kumamoto yeast's high-temperature saccharified liquor mother, and the mash that has been slowly fermented at low temperature is carefully made in a traditional sake bag.
